It is possible to assign a specific process to a team member, without necessarily changing the account owner. This is ideal for example when you have a separate team/person dedicated to onboarding clients. When a completed process is archived, the information about process owner is also saved so you can get stats/reports on onboarding performance by onboarder at a later point in time.

Please note that the process owner doesn’t have to be responsible for all tasks in the process, though when changing owner you get the option to also transfer ownership of any related tasks at the same time, which in many situations likely will be what you want (already checked task in the particular process will not be transferred)
